Personally, I never could understand why so many people like to destroy things they created. I hate it.

For the same reason a lot of people like to see apocaliptic movies (just to clarify, I'm one of them~): it's fun. And not only in a gore kind of way, because the destruction reach everything. It's so cool, specially if YOU'RE the one destroying it (that would guarantee you don't get "destroyed" too). The special effects in one's mind help to make things more shiny *__*.

Or maybe I'm weird.

Anyway, this isn't exactly "destroying". Jim's still creating his universe, his story. But for that story to work, some things (inside the story itself) need to be destroyed. It isn't the same as throwing your work to the garbage can. He's creating and destroying at the same time ;D.

Seeing apocalyptic movies is different because you didn't built the world that is destroyed.
Ad just to clarify, I don't think you are weird. I think I am the "rare" persona who don't like to destroy her work. Anyway, I see your point about Jim, but I was talking in general, not specifically for the Dresden Files.
