Because no one would see it coming, and it would be an awful reveal, and the only link is that there is an "e" on the end. Right in front of us this whole time...the purloined letter.

It gets worse the more you think about it.

I would assume Gray would be the surname, but we can compromise on him having an adopted British accent (because evil, duh) and drinking Earl Grey and going by Grossman Grey just to be contrary.
